Deconstructed Hipster "Palak Paneer"

Palak paneer is my favorite thing to order at Indian restaurants. This dish bears passing similarity to it, there are both spinach and cheese, but the similarities end there. This is light and refreshing, the cheese is entirely different than paneer, and I put it over quinoa instead of rice. This is easy, light, and delicious. Good for the summer and everything cooks so quickly you're barely adding heat to your kitchen.


Deconstructed Palak Paneer*
serves one

Prepare 1/4 cup dried quinoa. I use the rice cooker, it's easy and you ignore it until it's done.

Preheat small frying pan on medium heat then put halloumi in the frying pan. Halloumi release enough grease as it cooks that it doesn't stick, but it stays solid and awesome and delicious. (And it squeaks when you eat it, which is weird and fun.) Flip occasionally.

Put a small pat of butter and minced garlic in a large frying pan. Cover with as much spinach as fits. Spinach shrinks as it cooks, and it cooks fast. Add a splash of lemon juice towards the end.

Put it all together in a bowl and eat.

*This totally counts as cooking. It barely counts as a recipe, though, it's mostly a concept. An easy delicious concept.
